With the cold weather approaching, nothing seems more perfect for dinner than a hearty soup. This recipe is sure to warm you from the inside out!! I came across whole grain tortellini at Whole Foods which got the the hamster wheel rolling. I was thinking of making a traditional tortellini with a fresh tomato sauce but I wanted to do a little something different, a way to create a more balanced dish. This recipe came together in no time and included some nutritious, wholesome ingredients such as kale, cannelini beans and tomatoes. This is definitely a dish I'm going to make regularly!! So delicious and super easy!! Yields 8 servings
Ingredients: 5 cups low-sodium chicken broth 2 cups chopped kale 2 cups tortellini 2 cups shredded chicken 1 28oz can diced tomatoes 1 15oz can cannelini (drained and rinsed) 1 small white onion 4 cloves garlic 1/4 cup parmesan cheese 2 tbsp butter (I used Earth Balance Vegan Butter) 1 tbsp Italian seasoning 1 tsp salt 1/2 tsp black pepper Directions: 1. In a large pot, heat up the butter, add the onion and garlic and cook until the onions begin to become translucent. 2. Add chicken broth, diced tomatoes, cannelini beans , parmesan cheese, Italian seasoning, salt and pepper. Bring to a simmer. 3. Add the shredded chicken, tortellini and kale. 4. Let simmer for 10 minutes and serve!
