The sun is shining, the birds are singing, and warm weather is finally here! This long winter has finally ended. I am so excited for all of the fresh fruits and vegetables this season will bring!
This salad packs a punch of nutrients with tons of antioxidants from the kale and berries and extreme anti-inflammatory benefits! It's the simplest salad with the most delicious, wholesome ingredients.
1 bunch of kale
1 cup berries
1 avocado, sliced
chia seeds (optional)
1/4 cup olive oil
2 tbsp balsamic vinegar
2 tbsp honey
zest of a lemon
1/4 tsp salt
1) Remove stems and place kale into a large salad bowl
2) Whisk together ingredients for the dressing
3) Pour the dressing onto the kale and toss with your hands
4) Top with berries, avocado, and chia seeds
