Kick-start your day with these Strawberry Oatmeal Breakfast Bars! It's not always easy to eat a balanced breakfast before you start your day. Try making these the night before so you can just grab a bar and go! Conquer your day with a focused mind and fueled body! Yields 6 servings
Ingredients: Crust: 1 1/2 cup oat flour 1 cup rolled oats 1/2 cup plain Greek yogurt 2 egg whites 3 tbsp coconut sugar 3 tbsp unsweetened almond milk 2 tbsp melted coconut oil 1 tsp cinnamon 1/2 tsp baking powder 1/4 tsp salt Topping: 2 cups sliced strawberries 1/3 cup coconut sugar Cooking spray Directions 1) Preheat oven to 350 degrees 2) Line an 8x8' baking pan with parchment paper and spray with cooking spray 3) In a large bowl combine all of the ingredients for the crust. Mix until all ingredients are moist. Set aside 3/4 cup of the crust mixture and set aside. Take the remaining crust and line the bottom of the baking pan. Quick Tip: wet your hands with water and pat down the mixture. This will prevent it from sticking to your hands. 4) In another large bowl, coat the sliced strawberries with the coconut sugar 5) Pour the strawberry mixture on top of the crust. Sprinkle the remaining crust mixture onto the strawberries 6) Bake for 25 minutes 7) Allow to cool before cutting
