Spinach Feta & Quinoa Patties

It's that time of year again! September has arrived and it's time to head back to school. But don't let these busy days disrupt your healthy eating habits. Prepare your meals ahead of time. These patties are perfect to bring on the go! You could also make larger batches of these and freeze them. I topped mine with homemade tzatziki sauce which I shared with you as well! 
This recipe is also gluten-free ;)

Yields 7 patties

Ingredients:
1 1/2 cup cooked quinoa 
1 tbsp chopped fresh dill
1/2 tsp black pepper
1/2 cup finely chopped onion
1 tbsp extra virgin olive oil
2 garlic cloves
4 cups chopped spinach
2 large eggs, whisked
2 ounces feta cheese
1/4 tsp lemon zest
1/2 cup gluten free rolled oats
PAM Coconut Oil Cooking Spray

For the tzatziki:
1/2 cup plain greek yogurt
2 tbsp finely chopped scallions
2 tbsp diced cucumber
2 tsp lemon juice
2 tsp fresh dill
1/2 tsp black pepper

Directions:
1) Preheat oven to 425. Line a baking sheet with parchment paper and spray with PAM
2) Cook quinoa according to package directions
3) While the quinoa is cooking, combine ingredients for tzatziki sauce into a bowl. Mix together and place into the fridge for 30 minutes
4)Heat olive oil in a large skillet over medium heat
5) Add the onion and garlic and cook for about 4 minutes
6) Add the spinach and cook until it becomes wilted, about 3 minutes
7) Pour the mixture into a large bowl and then add in the quinoa, feta, eggs, dill, lemon zest, black pepper and oatmeal. Mix thoroughly
8) Use approximately 1/3 cup of the mixture and form each pattie with your hands. Place each pattie onto the baking sheet
9) Bake for 10 minutes. Flip the patties over and bake for another 10 on the other side. 
10) Top with tzatziki and enjoy!
