This dessert is perfect for the summer. Take advantage of this season's fresh fruit with this delicious tart that has an explosion of mixed berries!

Ingredients: 2 cups walnuts 2 cups unsweetened raisins 1/4 cup natural peanut butter (no sugar, salt, hydrogenated oils) 1/4 cup coconut oil (melted) 1/4 cup raw honey + 2 tbsp raw honey 1 tsp vanilla extract 1 tsp cinnamon 3 cups of berries (I used strawberries, blackberries, blueberries and raspberries)
For the crust: Pulse the walnuts in a food processor until it becomes a flour-like consistency Add the raisins and mix until it becomes a rough dough Press the dough down into a tart tin and put into the fridge for 2 hours
For the filling: In a large bowl, combine the peanut butter, coconut oil, honey, vanilla extract and cinnamon Whisk together until smooth Spread gently on the crust and place in the fridge for 1 hour
For the berries: slice the strawberries combine all berries into a large bowl and add 2 tbsp of honey Toss so all berries are lightly coated
After the crust and filling have been refrigerated, top it off with all of the berries!
