Quinoa is a staple in my diet! I always have a batch of it cooked in my fridge for times when I need to whip together a quick dinner. Quinoa has gained popularity over the past few years because of its nutritional properties. It is wheat-free and a great alternative for rice, bulgar, couscous and similar-like products. Quinoa is a good source of protein with about 8 grams per serving. It also has a unique amino acid profile, containing all nine essential amino acids making it a complete protein. Quinoa is also high in lysine, iron and phosphorus plus contains a significant source of Vitamin A, E, and B and calcium.
