Quinoa Powerhouse Salad

 I have been on a salad kick lately since vegetables are more readily available. This salad has become a staple in our house because I always have cooked quinoa on hand. I usually cook a a batch of quinoa at the beginning of the week so I have it on hand to make a quick meal. This recipe is extremely easy and if you already have the quinoa cooked, you can make it in minutes!!

I topped this salad off with some deliciously salty feta! Yum! Try opting for organic, antibiotic-free and hormone-free feta.

Yields 2 servings

Ingredients:
2 cups chopped spinach
1 cup quinoa
1/2 cup cherry tomatoes, sliced in half
1/2 cup cucumber, sliced in half
1/3 cup feta
1 large avocado, sliced

Dressing:
1/4 cup olive oil
2 tbsp balsamic vinegar
1 tsp lemon juice
1/2 tsp garlic powder
1/4 tsp mustard seed
1/4 tsp tumeric
1/4 tsp salt
1/4 tsp pepper

Directions:
1) In a large bowl, combine quinoa and spinach. Microwave for 45 seconds. (trust me, this salad is much better with warm quinoa)
2) Add tomatoes, cucumbers and avocado to the bowl.
3) In a separate small bowl, whisk together all of the ingredients for the dressing.
4) Pour the dressing on top of the veggies and gently mix.
5) Top with feta and serve!
