This recipe is absolutely delicious! A healthy, quick alternative to your heavy Mexican dishes.
Yields 4 servings Ingredients: 1lb ground chicken 1 15 oz can of black beans, rinsed and drained 3 roma tomatoes, diced 1 large onion, diced 4 garlic cloves, minced 2 tsp olive oil 2 tbsp tomato paste 1 tbsp roasted red pepper sauce 2 tbsp chili powder 1 tsp ground cumin 1/4 tsp salt 1 1/2 cups cooked long-grain brown rice 1/2 cup cheddar cheese 16 Boston bibb lettuce leaves
Directions: Heat a large skillet over medium heat Add olive oil, onion and garlic. Saute for 3 minutes Add the ground chicken. Cook for 3 minutes or until browned Stir in red pepper sauce, tomato paste, chili powder, cumin, salt Add in rice, tomatoes and beans Cook on medium heat for another 5 minutes, stirring often Sprinkle with cheddar cheese Cover and remove from heat Allow to sit for 2 minutes Serve with lettuce
