Gingerbread Cookies

Happy holidays! In the mood to bake for Christmas but don't have the time? Try this simple gingerbread cookie recipe! Enjoy the aromatic blend of ginger, cinnamon, nutmeg, and cloves along with their soft and chewy texture!!

I used unconventional cookie cutters of mittens and stars because they were adorable! Feel free to use which ever cookie cutters you desire :)

For my grains, I used Arrowhead Mills Organic Buckwheat Pancake and Waffle Mix! This mixture is filled with nutritious whole grains packed with fiber, calcium, iron, Thiamin, and Phosphorus! (They also offer gluten-free options) Plus, it is USDA Organic!

Yields 25 Cookies

Ingredients:
1 1/2 cup Arrowhead Mills Buckwheat Pancake and Waffle Mix (plus 1/3 cup for rolling)
1/2 cup brown sugar
1 egg (room temperature)
1/4 cup almond butter
1/4 cup coconut oil, softened
3 Tbsp raw honey
1 tsp ground ginger
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1/4 tsp salt
Cooking spray
Parchment paper
Powdered sugar (optional)

Directions
1) Preheat oven to 350F degrees and grease 2 cooking sheets
2) In a large bowl, whisk the egg
3) Combine almond butter, coconut oil, brown sugar and honey into the bowl and mix together
4) Add Arrowhead Mills Buckwheat Pancake and Waffle Mix along with the baking soda, spices, and salt. Mix together thoroughly and form into a large ball
5) Cover with plastic wrap and refrigerate for 1 hour
6) On a large piece of parchment paper, sprinkle about 1 tbsp Arrowhead Mills Buckwheat Pancake and Waffle Mix. Scoop dough mixture onto parchment paper and sprinkle another more dry flour on top. Add another piece of parchment paper on top and use a rolling pin to spread out the dough. You want an even consistency, approximately 1/4 inch. 
7) Remove top piece of parchment paper and use cookie cutters to cut out shapes. Gently transfer to cooking sheets. (Continue step 7 with leftover dough until you run out)
8) Bake for 8-10 minutes
9) Allow to cook for a couple minutes after removing them from the oven. I sprinkled mine with a little powdered sugar which was the perfect touch of sweetness!!
