My crockpot has become my best friend over the past couple months with my busy schedule. Most meals take less than 10 minutes to prepare and all you do is throw the ingredients into the crockpot and it’s cooked by the time you get home later that day! All this recipe involves is a little chopping.. that’s it!! Here’s the recipe below: Ingredients:
5 cups vegetable stock 2 cups tomato sauce 2 cups uncooked dark red kidney beans (presoaked) 1 cup of your favorite beans, uncooked (presoaked) -I used a mix of lentils, black beans, Great Northern beans….. 1 cup uncooked quinoa 1 large yellow onion, diced 1 green bell pepper, chopped 5 stalks celery, chopped 1 jalapeño, chopped 4 cloves garlic 1 can (28 oz) diced tomatoes 1 can chopped green chiles 3 tbsp chili powder 1 tbsp ground cumin 1 tsp coconut sugar 1 tsp salt 1 tsp black pepper Directions:
