I'm sure many of us can recall a childhood memory that involves us chowing down on a crunchy Rice Krispy square, sticky hands and all. Here's a treat to bring back those vivid memories, with a bit of a twist!
I was extremely excited when I came across these Rice Puff's at Whole Foods. They mimic your generic Rice Krispy cereal but they are ONLY made out of brown rice!! Can you sense the excitement?! So when life gives you Rice Puffs..... you make Rice Krispies.
Ingredients: 3 cups Nature's Path Rice Puffs 1/2 cup + 1 tbsp natural peanut butter 1/3 cup raw honey 2 tbsp coconut oil 1 tsp vanilla extract 1/8 tsp salt 1 cup dark chocolate chips
Directions: Prepare a 9x9 pan by covering it with wax paper In a large pot, heat 1/2 cup natural peanut butter, 1/3 cup raw honey and 2 tbsp coconut oil. Once it becomes liquid, remove from heat and add in the vanilla extract Add the 3 cups of Nature's Path Rice Puff's to the pot and stir so they become coated Pour the Rice Puff mix into the 9x9 pan and spread evenly (wet hands with water and press down) Once the mix is evenly spread, put it into the freezer for 15 minutes After the mixture had cooled, begin to make the topping: Melt the dark chocolate in a microwave safe bowl (3-4 intervals of 30 seconds, stirring in between) Stir in 1 tbsp peanut butter and 1/8 tsp salt Pour the chocolate mixture on top of the Rice Puffs and spread evenly
