Bring your meatloaf from drab to fab with this recipe! I’ve stuffed this meatloaf with spinach and feta and made a few healthy swaps such as using ground chicken instead of ground beef, using oatmeal instead of breadcrumbs, and adding in some flax seed.
1.5 lbs ground chicken
½ cup quick oats
1/4 cup unsweetened almond milk
1 onion, finely grated
1 tsp of each: salt, pepper, oregano, and marjoram
1 tbsp parsley
1lb fresh spinach
1 tsp olive oil
2 ounces feta cheese
Heat oven to 350 degrees
Mix together the ground chicken, oats, milk, egg, onion and spices
Stem the spinach, squeeze dry and chop. Pour olive oil into a small pot and add spinach. Cook until wilted (approx. 5 minutes)
Spread the wax paper over a cutting board. Put the meat mixture onto the wax paper and shape into a rectangle. As you can see in the picture, I used the pan for a reference of size. Keep the thickness as even as possible
Spread the spinach over the meat and crumble the cheese over the spinach
Use the wax paper to help roll up the meat into a log. Press and pat the ends shut.
Place the log, along with the wax paper into the pan and bake for 45 minutes
Remove from the oven and allow to cool for a few minutes
Cut into thick slices and serve!
