Busy days leave us limited time to prepare our meals which is why I've been creating dishes that can be made in less than 30 minutes! This Buffalo Chicken Quinoa Bowl takes even less time, as it takes only a few minutes to prepare and about 20 minutes to cook. Easy peasy, right?? It's also high in protein, packed with vegetables and one of my favorite superfoods, quinoa.
Yields 4 servings
Ingredients: 1 cup quinoa 2 cups water 1lb chicken breast, cubed 1 1/2 cups chopped broccoli 1 cup shredded cabbage 1 cup shredded carrots 1/3 cup bleu cheese 4 green onions, 2 tbsp olive oil 1/2 tsp black pepper
Dressing: 1/4 cup olive oil 1/3 cup hot sauce
Directions: 1. Rinse quinoa and drain well. In a medium sized pot, combine quinoa and water. Bring to a boil, cook for about 20 minutes (until the water is absorbed). Remove from heat and fluff the quinoa with a fork. 2. While your quinoa is cooking; in a large size skillet over medium heat, add 1 tbsp of olive oil and sauté the broccoli for about 5 minutes. Remove from the pan and set it aside. 3. Combine olive oil and hot sauce into a small bowl and whisk together. 4. Add the cubed chicken to the same pan. Sprinkle black pepper on top and cook the chicken for about 5 minutes. Add half of the buffalo dressing onto the chicken and allow to to absorb. 5. Combine your quinoa, broccoli, carrots, shredded cabbage in with your chicken and top off with the remaining dressing. Mix in the bleu cheese and green onions. 6. Top with extra bleu cheese and green onions if you choose (I sure did!!)
