Baked Stuffed Apple

Whether you're craving something sweet or feel like jazzing up your oatmeal for breakfast, this recipe is just for you!  These stuffed apples will be bubbling in their own syrupy juices with warm, bold flavors. 







Remember to choose firm, crisp apples when baking. You want apples that hold their shape and won't become mushy under high temperatures. My top suggestions include Honeycrisp, Golden Delicious, Cortland, or Mutsu. ;)

Ingredients:
2 large apples, cored
1 cup rolled oats
1 tbsp flax seed
1/2 tbsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla extract
4 Medjool dates, pitted and chopped
2 tbsp pecans, chopped
1/4 unsweetened apple sauce
1/4 cup unsweetened almond milk
2 tbsp coconut oil 

Directions:
1) Preheat oven to 375 degrees
2) Core both apples (about an inch or so, enough for the stuffing)
3) Add 1 cup of water to a rimmed baking dish and place in both apples 
4) In a bowl, combine remaining ingredients EXCEPT the coconut oil
5) Pour the oatmeal mixture into the apples and pack down firmly
6) Put 1 tbsp coconut oil on top of each apple 
7) Cover the baking dish with aluminum foil and bake for 15 minutes
8) Remove aluminum foil and bake for another 20-30 minutes (this may vary with your type of apple so keep an eye on it)
