Can't figure out what to pack for your lunch? Why don't you try this simple avocado egg salad! It's perfect for a sandwich, with crackers, or even on it's own. Avocado's are a powerhouse fruit packed with "healthy fats", fiber, and vitamins. In combination with eggs, this makes a deliciously and nutritiously balanced meal! Yields 4 servings
Ingredients: 2 small avocados 2 hard boiled eggs (with yolk) 2 hard boiled egg whites 1 tbsp plain Greek yogurt 1 tsp lemon juice 1/4 tsp dijon mustard 2 tbsp chopped green onion 1/2 tsp black pepper Directions: 1) Peel and remove pit from avocados. Place into a medium bowl and mash 2) Chop hard boiled eggs, both egg whites and full eggs and add to the bowl 3) Add the Greek yogurt, lemon juice, dijon mustard, green onion and black pepper. Mix together 4) Serve on on sliced bread, in a wrap, with crackers or on it's own :)
