Apple Crumble Cups

Fall is my favorite time of year with cozy crisp, cool nights and vibrant colors of red, yellow and orange! With the change of season comes many of my favorite fruits and vegetables as well such as apples, pumpkins, sweet potatoes and Brussel sprouts! This means these foods have maximum nutrients, flavor and you can buy many of them from a local producer! 

After making these delicious Apple Crumble Cups my house smelled of cinnamon and apple…. yum :)

Yields 10 Muffins

Ingredients:
1 cup gluten-free flour
1 cup peeled and chopped apple
1/2 cup plain Greek yogurt
1/2 cup coconut sugar
1/4 cup melted coconut oil
1 large egg
1 tbsp arrow root
1 tbsp cinnamon
1/2 tsp apple cider vinegar
1/2 tsp baking soda
1/2 tsp vanilla extract
1/4 tsp all spice
1/4 tsp nutmeg
1/4 tsp salt


For the crumble:
1/4 cup quick oats
3 tbsp gluten-free flour
2 tbsp unsweetened apple sauce
2 tbsp melted coconut oil
2 tbsp coconut sugar
1 tsp cinnamon


Directions: 
  1. Preheat oven to 350 degrees and spray muffin tin with nonstick spray
  2. In a large bowl combine the flour, arrow root, baking soda, cinnamon, all spice, nutmeg and salt
  3. In another large bowl, combine the melted coconut oil with the coconut sugar. Add the egg, Greek yogurt and vanilla extract. 
  4. Peel and chop the apples. Toss them in the apple cider vinegar. Once they are coated, toss them into the flour mixture. 
  5. Combine the wet and dry ingredients (do NOT over mix)
  6. Fill up your muffin tins about 3/4ths of the way
  7. In another bowl, combine your ingredients for the crumble. 
  8. Top each muffin with the crisp topping
  9. Bake for 20-25 minutes (until you notice the crumble becomes crisp and browned)
