Orange Spinach Salad
I have been working as a dietetic intern at the local YMCA, creating fun ways to get members excited about their health! I believe that Harvard's Healthy Eating Plate is a great starting point to create a healthy, balanced meal. I wanted to create a dish that represents all of the food groups in the diagram! This salad did just that!
Whole Grains: Brown Rice
Healthy Protein: Shredded Chicken Breast
Vegetables: Spinach, Red Onion, Cilantro
Fruit: Orange, Avocado, Lime
Healthy Oil: Olive Oil
Mission accomplished!! Not only did I include all of the food groups, but it turned out to be a delicious mixture of texture and flavor! I provided samples to members of the YMCA and it was an absolute hit! This allowed me to initiate conversation on the importance of creating balanced, nutritious meals and how easily it can be made!
